Crispy Jalapeno Poppers

These Poppers are whole food flavor bombs- stuffed with cheesy goodness, crusted in Vaca Chips, and baked (or air-fried) to a golden, crunchy finish. They're rich, salty, a little spicy, and unapologetically addictive.

Directions

Preheat oven to 400°F. Line a baking sheet with parchment.

Mix the filling: Combine cream cheese, cheddar, garlic powder, paprika, and salt.

Stuff the jalapeños generously. Don’t be shy- you want them full.

Dip each stuffed half in beaten egg, then press into crushed Ranch chips to coat the cheese side.

Place on baking sheet chip-side up. Give ‘em space. Spray lightly with oil for extra crisp.

Bake for 15–18 mins until bubbly and golden. Watch that crust- you want bronze, not burned.

Serve hot. Straight off the tray or on a board with lime wedges and maybe some ranch or hot honey.

Ingredients

8 jalapeños, halved and deseeded

4 oz cream cheese (pastured, full-fat)

1/2 cup shredded cheddar or jack cheese

1/4 tsp garlic powder

Pinch of smoked paprika

Salt to taste

1 egg, beaten

1–1.5 cups crushed Vaca Chips (fine to medium grind)
