Huevos Rancheros Skillet with Vaca Chips

This is what happens when brunch gets a backbone. Classic Huevos Rancheros- fried eggs, beans, salsa, but stacked over Vaca Chips, not floppy tortillas. Beef tallow-fried crunch, runny yolks, spicy salsa… all in one pan. It's a one-way ticket to flavor town with a pit stop in California.

Directions

  • Heat a cast iron or oven-safe skillet over medium heat.
  • Add a spoonful of beef tallow. Warm the beans, then push to the side.
  • Add a generous layer of Vaca Chips straight into the skillet- they’ll crisp even more as they hit the heat.
  • Spoon warmed beans over the chips. Add shredded cheese if using.
  • In a separate pan, fry your eggs sunny-side up or over-easy. Salt the yolks like you mean it.
  • Slide the eggs on top of the chip + bean mix.
  • Spoon salsa over the eggs.
  • Add avocado, jalapeños, red onion, and cilantro.
  • Hit it with a squeeze of lime. Optional: another handful of chips for scooping.

2- 4 pasture-raised eggs

1 cup black beans (seasoned with cumin, garlic & salt)

1/2 cup fresh or fire-roasted salsa (homemade or clean jarred)

1/4 cup shredded cheddar or jack

Avocado slices or guac

Fresh cilantro, chopped

Pickled or fresh jalapeños

Red onion, diced

Lime wedges

Tallow for cooking
